Mount Hood Destination Announces Staffing Change, Refines “Field and Stream” Culinary Approach

WELCHES (Mount Hood), Ore. – July 1, 2013 – The Resort at The Mountain is pleased to announce Matt Grimsley as its new executive chef and director of food and beverage.
In his position as both executive chef and director of food and beverage, Grimsley is responsible for overseeing all culinary operations including menu development and quality assurance for all aspects of the food and beverage program at the premier Oregon golf, ski and meeting resort.
Under Grimsley’s leadership, The Resort is refining its “field and stream” approach to its culinary offerings. With the use of ingredients indigenous to the Mount Hood area, as well as the greater Pacific Northwest region, both Altitude and mallards café & pub will feature more seasonally inspired and locally sourced cuisine.
“Matt is a very talented chef with a great understanding of the Mount Hood area,” said John Erickson, general manager at The Resort. “His previous experience as well as his passion for cooking and developing compelling menus is of great value to The Resort and our guests.”
Grimsley comes to The Resort most recently from Beaches Restaurant and Bar in Vancouver, Wash. where he was the executive chef. His previous experience also includes executive chef positions at the Arizona Country Club in Phoenix; Timberline Lodge in Timberline Lodge, Ore. and Columbia Gorge Hotel in Hood River, Ore.
The Resort offers two dining establishments: Altitude, the casually upscale and Northwest-inspired restaurant located in the property’s main building, and mallards café & pub, the seasonally open casual restaurant located adjacent to The Resort’s golf complex, The Courses.
